Exciting relocation opportunity to Ireland : The hotel is a renown property independently owned which has been refurbished and is a popular destination for weddings and events also with extensive grounds to include a stunning organic garden.
The Development chef will work directly with the owners and with the support of the existing team and head chef to:
- To develop a unique food identity that encompasses our organic garden and local suppliers at the heart of all our menus, lots of scope to also retail products /jams /chutneys etc grown in the garden
- To develop a menu plan for all outlets across the year
- To train the kitchen team on an individual basis and imbue in them a clear sense of who we are as a kitchen team
- To work with the head chef to ensure food costs are managed in a responsible way
- To work with our gardening team to ensure food plan is implemented
- To collaborate with our social media team to tell our food story and engage in promoting our brand
- To engage in events that help recruit, promote and engage with our community
Daily list planning and team briefing
Develop the multis out let menus within the hotel
Link Kitchen, Garden and social media teams
Update childrens menu
Develop a training plan for each member of the kitchen and ongoing training
SOP including pictures on every dish
Develop a range of preserved goods for sale
Develop the events menus
Develop the lobby menu
Develop Seasonal specials throughout the year
Refine breakfast offering
About You
Previous development background within the 4/5 * hotel sector able to work with both premium and casual dining brands.
Trend aware and able to work with the marketing team to promote new ideas via social media
Excellent communication and organisational skills
Will have a calm professional demeanour and a passion for delivering great product.
Excellent at ongoing training and mentoring and development of staff
Great people skills and experience of managing large teams
Able to given examples of how your previous menu and product development chef experience has impacted on the operations revenue and growth
Must have a stable working history with excellent checkable references
Would require own transport as in stunning rural location and 15 mins drive from nearest town.
