Vacancy Description:

Our client is looking for an experienced and qualified Head Chef to become the face and name of an impressive and exciting new restaurant, opening in a beautifully rural Cotswold setting in April 2018.  The Head Chef will help determine and lead both the focus and style of the restaurant and will be key to all recruitment and developing a brand associated with high-quality dining.

The kitchen will oversee a restaurant accommodating up to 170 covers as well as a bar with a scaled down offering to a more casual  diner.  The property boasts a  golf course that has undergone considerable works of improvement over the last four years and this facility will create footfall throughout the week and also attract guests to the on-site hotel.  The restaurant will be a stand alone feature of the development and will be marketed and open to non members, but there will be the opportunity to deliver larger scale events throughout the year.

There will also be access to our ecology island project where we hope to grow garden produce and keep bees and the Executive Head Chef must champion the concept of working in harmony with nature and supporting the local community in terms of procurement of produce wherever feasible.

This is a chance for someone to develop their own name and an exciting opportunity to mould a reputation for a newly built property.  We are looking for innovation and excitement whilst providing the stability that enables us to develop a strong reputation for quality, service and imagination.  We want someone that is able to deliver the classics, but to add their own personal twist and flair, we want to surprise and impress our guests not bore them with the standard fare of a gastro pub.

We want people to return to the operation  for the food and service alone, we want the experience to create memories that help drive people back again and again.  We want there to be huge pride in our kitchen and we want an Executive Head Chef that can stand up and lead this team whilst also retaining and promoting a clear understanding of the overall vision offering our guests several quality services and a variety of experience.

About you:

  • Recruit and embed the team, ensuring a clear vision binds the personnel at every level.  It is critical that the Head Chef is able to not only deliver within the kitchen, but also to understand and promote a culture where everyone works together to land the bigger picture and create a seamless guest experience regardless of where the customer stands.
  • Construct seasonal menus with new or existing culinary creations ensuring the variety and quality of the servings.
  • Build and embed processes that enable the kitchen to function with maximum efficiency whilst creating a framework that allows employees to flourish and contribute to the business as a whole.
  • Approve and “polish” dishes before they reach the customer
  • Propose and implement ideas to best showcase the menu and capabilities of the kitchen – be prepared to think outside the box with participation at food fairs, festivals and markets.
  • Plan orders of equipment or ingredients according to identified shortages and champion local produce whenever possible. 
  • Be instrumental in the development of the ecology island and incorporate this in the menu whenever possible.
  • Maintain the kitchen environment and arrange for repairs and servicing when necessary.
  • Be fully in charge of hiring, managing and training kitchen staff to not only deliver excellence in that department, but also to contribute to the broader operation
  • Oversee the work of subordinates – mentor those around you to grow and improve.
  • Maintain oversight of staff’s workload and compensations – ensure the kitchen is always staffed appropriately, but balance this with regulations and the welfare of the team.
  • Maintain records of payroll and attendance
  • Comply with and surpass nutrition and sanitation regulations as well as safety standards.
  • Foster and champion a climate of cooperation and respect between co-workers and lead by example at all times.

Requirements

  • Proven experience as head chef or several years as a number two.
  • Exceptional proven ability of kitchen management
  • Ability in dividing responsibilities and monitoring progress
  • Outstanding communication and leadership skills
  • Up-to-date with culinary trends and optimised kitchen processes
  • Good understanding of useful computer programs (MS Office, restaurant management software, POS)
  • Credentials in health and safety training
  • Degree in Culinary science or related certificate
Salary & Benefits:
£35 -42 k per annum
