The head chef will be responsible for the opening and menu development of the operation and will play an integral part in the further expansion of the company
This represents an excellent opportunity for a Head Chef preferably with good high end brasserie restaurant experience (strong ability to implement structure and standards) to oversee the successful opening and day-to-day kitchen operation of the new venture and further group expansion.
Full kitchen management and financial responsibility.
Menu creation, tasting and development.
Achieving the budgeted food GP through careful menu planning and weekly analysis.
Team Training ,Mentoring & Development, Tastings & Briefings & Appraisals.
Stock Control: Supplier Liaison, Ordering, Invoices, Stock Counting, Wastage Control.
Due Diligence: HACCP / COSSH files & procedures, Hygiene, H&S Records & Cleaning Rosters.
Preparing for and attending weekly Management meetings.
Creative approach to menu planning.
Genuine Passion to Cook & Develop Head Chef Skills.
Experience in high end restaurant brasserie with knowledge of international cuisine , up to date on current culinary trends, menu planning.
A fast paced brasserie restaurant , background is an advantage.
Ability to Motivate & Train team members effectively, ‘hands on’ management style.
Strong Leadership, Communication, Organisation & Technical and cost control skills.
Strong on Due Diligence – up to date on current Hygiene Legislation.
Excellent attention to detail and a committed, motivated, flexible working approach.
Minimum 2 years’ experience in a similar role
