With a 1a.m license on the weekend ( though food service would stop at 10pm) - Amazing cocktails and music, accommodation could also be available for the right person in a newly refurbished flat nearby|
Assisting the head chef in overseeing the operation of a 60 cover plus restaurant
Experience as a kitchen manager/ sous chef in a quality authentic renown Mexican restaurant operation ( such as Bodega Negra)
Menu creation, tasting and development.
Recruitment responsibilities ( recruiting new team)
Training the team in the concept/menu , Development, Tastings & Briefings
Stock Control: Supplier Liaison, Ordering, Invoices, Stock Counting, Wastage Control.
Due Diligence: HACCP / COSSH files & procedures, Hygiene, H&S Records & Cleaning Rosters.
Integral part of the successful operation of the business as a whole
The Ideal Candidate will have proven senior Chef experience gained working within a comparable, Mexican restaurant business either in the UK (London) or Internationally
Naturally organised with the ability to multi-task, you will demonstrate strong creative & man management skills and enjoy working in a busy, fast paced service / kitchen environment
Strong on Due Diligence, you will also be up to date on current Hygiene Legislation with new opening experience an advantage
Genuine intention to offer long term commitment to next role with verifiable references
|Salary & Benefits:|
|35 k per annum - 25k basic plus service charge|
