The Company:
This 2 rosette restaurant located in the heart of rural Herts is now offering a fantastic opportunity for a committed & highly motivated Head Chef to lead the kitchen team.
Vacancy Description:

Our Client is looking for a driven and motivated head chef or sous looking for next step up with concepts and ideas to give the Restaurant a new identity on the guidelines of using local produce from local suppliers, simple food, cooked well, presented beautifully.

The focus must be all about the flavour and still be affordable. The food cost margins are not stringent, but a financial acument needs to be applied within reason.

Within the next two years the farm has plans to plant  their own ‘kitchen garden’  where they  will be pulling on the farming roots and planting vegetables/ herbs/ salads to be used in the kitchens, on menus

Plans are also afoot to relocate the Restaurant to a double tiered restaurant with a new kitchen being created, which the new Head chef  will be heavily involved to ensure that they have all that they need to push the business forward. 

Working closely with the Executive Head  you will play an integral role in the continued culinary success of this award winning business.

Responsibilities include:

Smooth Daily Running of Kitchen – 14 chefs 

Menu Design & Development – Accurate Costing & Spec’ Sheets

Stock Control: Purchasing, Supplier Liaison, Stock Auditing (Stock Controller), Wastage Control

Finance Management: P&L (Purchasing & Payroll), Budgets, Business Plans, Figure Reporting, General Bookkeeping

Team Recruitment, Leadership & Direction, Training, Appraisals & Disciplinary / Grievance Procedures

Due Diligence: Hygiene, H&S, Fire Safety, First Aid Records & Procedures

Management Meetings & Business Development

Reporting to Executive Chef

About you:

Proven Head Chef experience gained within a comparable Business: 2 rosette or high end gastro enviroment

Strong Skill Set with Proven Track Record in all Areas of Kitchen Management

Essential – Ability to deliver accurate Dish Costings & meet Purchasing / Payroll targets

Genuine Passion to Cook with ability to deliver inspired 2AA Rosette Standard Menus within High Volume Operation

Strong on Due Diligence – up to date on current Hygiene Legislation

Immediate Start – Able to Accommodate 1 Month’s Notice Period

Salary & Benefits:
£40 -45k per annum
