The Company:
Situated in stunning Kent Countryside, An international expanding company with multi outlets in both UK Europe and Asia offering overseas staff training opportunities currently has a position for a Sous chef within a Corporate Seminar and Meeting Event Venue. With 62 bedrooms and an 86 cover restaurant located on the Kent Surrey Sussex borders. Just 40 minutes south of London and catering solely for the resident delegates as not open to the public. Excellent benefits to include generous holiday allowance - closed for 2 weeks at Xmas and 3 weeks in August and as a corporate clientele - 2 out of 4 weekends off - fully funded relocation paid for international future transfer overseas.
Vacancy Description:

International /European seasonal Food offering all freshly prepared on site to 1/2 rosette level - lunch dinner and breakfast running as separate service

Sittings are pre booked by delegates - one menu option per sitting and an alternative catering for specific dietary requirements 

Not open to the public -

Open kitchen environment - friendly relaxed kitchen with supportive head chef   Responsibilities include: Assisting head chef with Menu planning, costing and specification for menus on a daily basis  Overseeing daily kitchen operations in absence of the head chef , leading and directing a brigade of 5 – chefs on service ordering & liaising with quality suppliers, invoices, food wastage management, weekly auditing  Kitchen team recruitment, rotas, training and development, Due diligence: HACCP / COSSH files & procedures, maintenance of kitchen & equipment, cleaning rosters

About you:

With proven senior Chef experience gained within quality restaurant/hotel operations equivalent to 1/2 rosette level you will have excellent all round skills with a creative approach to menu planning and a real passion to cook

Able to lead a team effectively, you will have a ‘hands on’ management style, have excellent organisation and cost control skills, good levels of technical skill and knowledge of modern European/international menus

With excellent attention to detail and a committed, motivated, flexible working approach, you will also be up to date with current UK hygiene, health and safety legislation

Salary & Benefits:
£24k - per annum Basic Start Salary (initial accommodation also available)
