A popular neighbour hood gastropub situated in Surrey, this established food led Gastro / Restaurant with 100 cover dining room, extensive Lounge space and large Garden with BBQ is a firm favourite within the local area. Showcasing small farm & artisan suppliers from the immediate / local area – rolling / daily changing menus reflect what’s best at market with nose to tail style, rustic touches & more technical dishes (British / European), supporting by an extensive wine list. Additional Rotisserie & Barbeque offering during summer months with average net weekly food sales ranging from £20,000 to £25,000 (weather permitting). Service: Mon to Sat Lunch: 12pm – 3pm, Mon to Sat Dinner: 6.30pm – 9.30pm / 10pm, Sun: 12pm – 6pm (incl Garden Barbeque / Weather permitting)
Vacancy Description:

Head Chef to manage  all areas of kitchen management, responsibilities include:

Menu planning, costing and specification for the dining room, bar, private parties & summer barbeque

Overseeing daily kitchen operations, leading and directing a brigade of 5 – 6 chefs in Head Chef’s absence

Stock control, ordering & liaising with quality suppliers, invoices, food wastage management, assisting with weekly auditing (70% GP target) / Excel computerised stock system

Kitchen team training and development, briefings & tastings, etc

Due diligence: HACCP / COSSH files & procedures, maintenance of kitchen & equipment, cleaning rosters

About you:

With proven Head Chef experience gained within award winning / quality restaurant Brasseries and / or gastro pubs, you will have excellent all round skills with a creative approach to menu planning and a real passion to cook

Able to lead a team effectively, you will have a ‘hands on’ management style, have excellent organisation and cost control skills, good levels of technical skill and knowledge of traditional / modern British / European menus

With excellent attention to detail and a committed, motivated, flexible working approach, you will also be up to date with current UK hygiene, health and safety legislation

Salary & Benefits:
£33k per annum
