Vacancy Description:

The Sous Chef role is an Assistant Head of Department role.  Deputising in the Executive Head Chef’s absence.  Managing the day to day preparation and organisation of the kitchen for service.  Managing the section Chefs for the service in two dining rooms and several private rooms.  Being a hands on Deputy in this busy environment.  Running the main pass for two dining rooms.

The Dining room offering classic British dishes to 2 rossette standard  with modern cooking techniques & a twist, supported by additional modern, innovative dishes – menus are highly seasonal with all ingredients sourced from award winning UK Farm & Estate suppliers.

Excellent hours 48 plus paid overtime  Role Working closely with the Head Chef & General Manager on site, responsibilities will include supporting the Head Chef in all areas of kitchen management: Menu Planning – a la Carte & Function menu (accurate costings & recipe / dish specification) Smooth running of the kitchen – team direction & delegation  deputising in Head Chef’s absence Stock control: supplier liaison, ordering, invoices, weekly stock counting & wastage control, maintaining GP target  Team training & development, rosters & time sheets, personnel files Due Diligence: Hygiene Records & Procedures, Cleaning Rosters

About you:

The ideal candidate should come from a deluxe high volume background.  Hotels and established Clubs are preferable.  The applicant should be comfortable in both high volume events and private dining as wells as fine dining restaurants. Experience in both traditional and modern British cuisine.  A Junior sous  or Sous looking for their next move.  London experience is essential.  Good man management skills. –

Strong Leadership, Creative, Organisation, Communication & Technical Skill Genuine Passion to Cook with ability to deliver high levels of food quality – a la Carte & Banqueting Strong on Due Diligence – up to date on current Hygiene Legislation Genuine intention to offer long term commitment to next role (min. 2 yrs)

Salary & Benefits:
£30 K per annum plus excellent hours and benefits
