Role Details:

As a Kitchen operations Manager within the Central Production Unit, you will have overall accountability and responsibility for all aspects of food production operation including purchasing, storage, high care & low care food preparation, cooking, packaging and distribution of a range of ambient, chilled and frozen products to various high end cafe/restaurants across London. The candidate will be supervising a team of 5-8 Chefs/food handlers.

Key Responsibilities include:

-Overseeing and daily running of the production kitchen

-Responsible for recruitment and training of production team members

-Managing rotas

-Supervising the team to ensure the range is consistently produced to the high standard set in place

-Ensure that all UK & EU food safety legislation and HACCUP systems are adhered to

-Managing all aspects of Environment and Quality assurance. Role modelling safe behaviours and reporting unsafe behaviour, near misses and accidents/incidents to manage in a timely manner

-Maintain company compliance by ensuring that company/contract accountancy, documentation, audits and administration procedures are carried out to the required standard

-Maintain legislative compliance by ensuring that all aspects of the business are conducted in accordance with all relevant statutory requirements and codes of practice. Including cook chill guideline requirements are met utilising Hazard Analysis and Critical Control Points (CCP’s) and other risk analysis systems where appropriate

-Meeting production and delivery deadline and working with the department to ensure COGS targets are met 

About You

·Previous chef kitchen operational food production experience essential

·Proven track record in leading, managing and development of a diverse team

·Level 3 Advanced level 4 HACCP (advanced level 4 HACCP highly desirable but not essential)

·CIEH or equivalent, Level 4 highly desirable

- Level 2 HACCUP certified desirable

·H&S management level awareness

·Must be able to demonstrate effective verbal and written communication

·Able to work on own initiative and within a team environment

·Demonstrate attention to detail and adherence to standards

·Computer literate

Salary & Benefits:

£43k per annum
