Hours: Part-time, Thursday to Saturday evenings
About the Role
 Each evening service averages around 24 covers, providing you with the
opportunity to focus on precision, creativity, and consistency.
Key Responsibilities
• Prepare and cook authentic Japanese dishes using locally sourced ingredients.
• Design and adapt menus that highlight seasonal produce while staying true to Japanese culinary
traditions.
• Manage kitchen operations efficiently during service for approximately 24 covers per evening.
• Ensure compliance with food safety, hygiene, and health regulations.
• Maintain a clean, organised, and professional kitchen environment.
• Collaborate with front-of-house staff to ensure a smooth guest experience.
Requirements
• Proven experience as a chef specialising in Japanese cuisine.
• Strong knowledge of traditional Japanese techniques and dishes (e.g. sushi, sashimi, tempura,
kaiseki-style plating).
• Passion for seasonal and locally sourced ingredients.
• Ability to work independently in a small team environment.
• Excellent time management and organisational skills.
• Flexibility to work Thursday, Friday, and Saturday evenings.
