Expanding foodie operation in East Sussex working with noted exec chef.
We’re looking for a hands-on, charismatic leader to take charge of front-of-house
operations and guest experience.
As Restaurant and Bar Manager, you’ll be the senior
FOH figure, ensuring seamless service and driving the restaurants reputation as a must-visit
dining destination.
You will report into the GM but work day to day with the award winning Head Chef
You will like working in a collaborative, energised and ambitious small
team. We will expect you to be able to operate day to day with a fair degree of autonomy
and with a freedom to get things done so a high level of organisational skill and planning
ability will be important.
Key responsibilities include:
• Leading service from the front, mentoring and inspiring the FOH team
• Ensuring exceptional guest experiences through structured, detail-focused
service, training, mentoring and daily briefings
• Developing relationships with our VIPs and multi repeat customers
• Developing the wine side of our service, in particular fine wines and our
extensive English Wine list (one of the largest in the UK)
• Managing daily FOH operations, including stock control, compliance, and
training
• Overseeing team rota’s to balance service quality and standards with budgeted
cost
• Working closely with the kitchen team to maintain harmony between food and
service
• Driving sales and profitability while maintaining quality
Typical Working Pattern
• 1 mid-week admin day
• 4 evening shifts per week (incl. weekends) – 3 to close, 1 until 22:00
• 1 full weekend oO per month
Covers
The operation is open seven days a week for dinner and at lunch on weekends. During the
holidays we will be open for lunch every day of the week. As business dictates, we will
also open for lunch at other times.
About you
Experience in a senior FOH role in a fine dining or premium restaurant
• Experience (and who has a genuine interest in) wine, particularly finer wine.
• A natural host who enjoys engaging with guests and leading a team that is
performing optimally
• Confident in managing stock, budgets, and financial targets
• Is tech proficient / is able to create and use simple spreadsheets
(Excel) to assist with tracking costs and performance / has experience, is
confident using, cloud storage systems for files (Dropbox)
• Organised and detail-focused, with a passion for training and mentoring
• Honest and open with a thirst to learn, particularly in areas where knowledge is
below par
• Is confident managing and working with our online booking system (currently
Resdiary) and Litespeed our till OS. If you aren’t already, you will need to
become fully conversant and expert at working with these relatively simple
platforms autonomously
• Excellent, friendly communicator, both written and in person
• Has an eye for detail and process, and is comfortable following existing structures
for menus, using a simple InDesign template
Package
• Full-time, 45 hours per week
• Salary £38,000 – £40,000 + Tronc (£5,000)
